Here, ancestral know-how meets modern techniques to reveal all the richness and authenticity of the terroir. Each step is precisely thought out to enhance the grapes and preserve their uniqueness.

Authentic and atypical wines
Sorting and Pressing
As soon as they arrive in the cellar, the grapes are sorted by hand to guarantee impeccable quality. The white grape varieties are gently pressed to extract very fine juices.
Fermentation
The juices ferment naturally thanks to indigenous yeasts, thus revealing all the typicality of the terroir. This step is carefully monitored to respect the balance of each vintage.
Breeding
The wines are aged in a combination of containers, each chosen for its specific qualities:
Amphorae: For gentle micro-oxygenation and a velvety texture.
Stainless steel tanks: To preserve the freshness and purity of aromas.
French oak barrels: To provide structure, complexity and subtle woody notes.
Assembly
Blending is an art at Domaine des Perchés. Each grape variety and each plot is tasted to find the perfect harmony between power, elegance and balance.
Each grape variety has its own setting, carefully chosen to capture the quintessence of the terroir.

The Cellar Team: The Master Craftsmen
At Domaine des Perchés, each wine tells a story, that of the terroir that saw it born. From the vine to the glass, it reflects the know-how of master craftsmen, from the rigorous selection of the first bunches, to the vinification and aging. Everything here is marked by a demand for perfection.
The ambition is clear: to create unique and bold wines that fully express their character. Like a painter in front of his canvas, they are gradually revealed, over the course of their creation, in various containers: stainless steel vats to enhance the vibrant side of the fruit, concrete vats for roundness, amphorae or egg-shaped sandstone vats to reveal their minerality and aromatic complexity.
Some also rest in small cigars (300l), others flourish in oak demi-muids (600l) to gain in breadth and character. We also like to carry out micro-vinifications, on small volumes (2 to 56 hl) in order to explore the whole range of possibilities!

Because each grape variety has its own properties, we choose its setting with care, so that the wine can express its full potential.

In the shade of the aging cellar, nicely named the Chapel, the wines gather and grow in silence, under the benevolent gaze of the stained glass windows which tell, in images, the work in the vines, the 4 seasons and the epilogue of the tasting.

The Cellar: An Allegory of Modernity and Tradition
In a dedicated space, micro-cuvées such as GPS and Rù benefit from special care. These bold creations are matured using experimental methods that push the boundaries of winemaking know-how.
The recent installation of the winery, fully equipped with the latest technology, supports this process. A humidifier gently diffuses steam to maintain an optimal humidity level.
In addition, the cellar is equipped with precise thermoregulation, ensuring ideal conditions during vinification allowing the aromas to develop fully, guaranteeing the finesse and richness of the vintages.
For Carine, this approach is not simply a method, but an obvious fact. It is the bridge between age-old tradition and the audacity of modernity.
